Ingredients:
  • 12 hard-boiled eggs
  • 123.75 gm whole-egg mayonnaise
  • 8 slices white sandwich bread
  • 8 slices rye bread
  • 750.00 ml shredded iceberg lettuce
  • 8 slices wholemeal bread
Instructions:
  • Chop eggs coarsely and transfer to a bowl. Mix in mayonnaise, season with salt and pepper, and mash with a fork until combined.
  • Lay out white bread and rye bread. Spread with egg mixture and top with lettuce. Place rye bread spread side up on top of white bread. Finish with wholemeal bread on top of each stack. Remove crusts with a serrated knife and cut each stack into 3 fingers. Serve.
