Speedy spinach, egg, and cottage cheese casserole ready in 1 hour.
Ingredients:
  • 6 eggs, beaten
  • 0.75 cup onion, chopped
  • 0.25 cup all-purpose flour
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 (16 ounce) package small curd cottage cheese
  • 1 (16 ounce) package shredded Cheddar cheese
  • 0.5 cup butter, melted
  • salt and pepper to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously grease a 9x13-inch baking dish with cooking spray.
  • Combine eggs, onion, and flour in a mixing bowl and beat until flour is smooth. Mix in spinach, cottage cheese, Cheddar cheese, butter, salt, and pepper until well blended; transfer mixture to the prepared dish.
  • Bake the casserole in the preheated oven until it's bubbly and golden brown, should take around 45 minutes.
