Seasonal veggie curry with cauliflower rice and roasted pumpkin.
Ingredients:
  • 700g Kent pumpkin, unpeeled, seeded, cut into 2cm wedges
  • 60ml sunflower oil
  • 8 Free Range Eggs
  • 1 brown onion, thinly sliced
  • 20.00 ml ginger, finely grated
  • 1/2 x 283g jar (about 1/2 cup) Patak’s Rogan Josh Curry Paste
  • 22.20 gm tomato paste
  • 2 large tomatoes, finely chopped
  • 14.40 gm honey
  • 1 medium cauliflower, cut into florets
  • 140g yoghurt
  • 1/2 tsp cumin seeds, toasted, crushed
  • 3.60 gm honey, extra
  • 250.00 ml coriander sprigs
  • 1 Lebanese cucumber, sliced
Instructions:
  • Preheat your oven to 180C. Line a baking tray with baking paper. In a large bowl, coat the pumpkin with half the oil and season with salt. Transfer the coated pumpkin to the tray. Roast for 30-35 minutes until just tender.
  • While the eggs are cooking in boiling water for 5 minutes or until desired doneness, transfer them to a bowl of ice water to cool before peeling.
  • Heat the rest of the oil in a spacious non-stick pan over medium heat. Sauté the onion until slightly browned, about 3-4 minutes. Introduce the ginger and garlic, continue cooking for 1 minute. Add the curry paste and cook until fragrant, about 2-3 minutes. Mix in the tomato paste, tomato, honey, and 200ml water. Bring to a simmer, then lower the heat. Let it simmer for 6-8 minutes until the sauce thickens. Finally, add the eggs and heat through for an additional 2 minutes.
  • Pulse the cauliflower in a food processor until it resembles grains of rice, making sure not to over blend to avoid a mushy texture. Transfer to a microwave-safe bowl, cover with plastic wrap, and microwave on high for 5-7 minutes, or until tender.
  • In a bowl, mix together yoghurt, cumin seeds, extra honey, and season with salt.
  • Distribute the cauliflower rice evenly among the bowls. Layer the roasted pumpkin on top and spoon the egg rogan josh over it. Garnish with the yoghurt mixture, coriander, and cucumber before serving.
