Festive eggnog cupcakes for the ultimate holiday celebrations.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1 cup white sugar
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 cup unsalted butter, softened
  • 0.5 cup eggnog
  • 0.25 cup all-purpose flour
  • 1 cup eggnog
  • 0.25 teaspoon freshly grated nutmeg
  • 1 cup unsalted butter, softened
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with paper baking cups.
  • In a medium bowl, combine flour, sugar, nutmeg, baking powder, baking soda, and salt. In a separate large bowl, cream 1/2 cup of butter for about 1 minute. Add the flour mixture all at once and beat until the mixture is crumbly.
  • Add eggs and beat for 30 seconds until light in color and slightly fluffy. Scrape the sides and bottom of the bowl thoroughly. Beat for another minute, then scrape the bowl again. Gently mix in eggnog until the batter is silky and smooth. Divide the batter evenly among the muffin cups.
  • Bake the cupcakes in the preheated oven for 25 to 28 minutes until the tops spring back and a toothpick comes out clean. Let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely, about 20 minutes.
  • In a 2-quart saucepan, combine sugar and flour for the frosting. Add eggnog and nutmeg, whisking until smooth. Heat over medium heat, whisking constantly until mixture boils and thickens to coat a spoon. Transfer to a bowl and cool for about 45 minutes before using.
  • In a large bowl, use an electric mixer to beat the butter and salt until creamy. Pour in the cooled eggnog mixture, continue beating until the frosting is light and creamy. If the frosting appears curdled or separated, keep beating until it comes together, usually within a few minutes.
  • Frost the cooled cupcakes using a spatula or piping bag.
