Indulge in decadent eggnog cupcakes with sweet eggnog frosting for a festive holiday treat.
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix
  • 1.5 cups eggnog
  • 4 eggs
  • 0.25 cup butter, melted
  • 1 teaspoon nutmeg
  • 1 cup eggnog
  • 2 tablespoons all-purpose flour
  • 0.25 cup shortening
  • 1 cup white sugar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), and generously grease 24 muffin cups or line them with pretty paper liners.
  • Combine yellow cake mix, 1 1/2 cups eggnog, eggs, 1/4 cup melted butter, and nutmeg in a bowl until the batter is smooth. Fill prepared muffin cups about 2/3 full with the cupcake batter.
  • Bake in the preheated oven for 12 to 14 minutes until golden and the tops spring back when lightly pressed. Then, transfer cupcakes to a wire rack to cool completely.
  • Combine 1 cup of eggnog and flour in a saucepan over medium-high heat. Cook until the mixture thickens, about 5 to 7 minutes. Remove from heat and let it cool completely.
  • Cream together butter, shortening, and sugar in a bowl using an electric mixer until fluffy, about 2 to 3 minutes. Gradually mix in chilled eggnog mixture until frosting reaches desired consistency. Spread the frosting onto cooled cupcakes.
