Elevate your holiday brunch by adding leftover eggnog to pancake batter for a decadent twist.
Ingredients:
  • 2 teaspoons vegetable oil, or as needed
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1.25 cups eggnog
Instructions:
  • Warm up the vegetable oil on a griddle or shallow frying pan set over medium heat.
  • In a bowl, combine flour, sugar, baking powder, baking soda, and salt. Gradually mix in eggnog until batter is silky smooth.
  • Pour the batter onto the griddle, forming a 4- to 5-inch circle. Cook until bubbles form around the edges and the bottom is golden brown, approximately 5 minutes. Flip and cook until the other side is evenly browned, around 5 more minutes. Repeat with the rest of the batter.
