Elevate your Christmas morning with delicious eggnog pancakes.
Ingredients:
  • 257.50 gm milk
  • 126.25 gm pouring cream
  • 40.00 ml brandy
  • 4.40 gm vanilla extract
  • 53.75 gm caster sugar
  • 1.25 gm ground nutmeg
  • 300.00 gm self-raising flour
  • 10.00 gm butter, to serve
  • Melted double cream, to serve
  • Maple syrup, to serve
Instructions:
  • In a blender, combine eggs, milk, cream, brandy, vanilla, sugar, and 1/4 teaspoon nutmeg. Blend until frothy.
  • Transfer the mixture to a large bowl, sprinkle flour over it, and whisk until well combined.
  • Preheat a non-stick pan over medium heat and lightly brush with melted butter. Pour 2 tablespoons of batter into the pan and cook for 2 minutes until bubbles form. Flip and cook for 1-2 minutes until golden brown. Transfer to a plate, cover to keep warm, and continue the process with the rest of the batter.
  • Place 3 pancakes on each plate, generously top with double cream, drizzle with maple syrup, sprinkle with remaining nutmeg, and enjoy!
