Whip up festive eggnog pancakes for a delightful holiday breakfast the whole family will adore.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.25 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground nutmeg
  • 0.5 cup very thick eggnog
  • 0.5 cup milk
  • 1 egg, beaten
  • 1 tablespoon oil
Instructions:
  • Combine the flour, sugar, baking powder, and nutmeg in a bowl, sifting before stirring. In a separate bowl, whisk together the eggnog, milk, egg, and oil. Pour the eggnog mixture into the flour mixture and stir until the batter is moistened and slightly lumpy.
  • Preheat a lightly oiled griddle over medium-high heat to 350 degrees F (175 degrees C). Spoon batter onto the griddle, cook until edges are dry and bubbles form, about 3 to 4 minutes. Flip and cook until the other side is golden brown, around 2 to 3 minutes. Repeat with the rest of the batter.
