Caramelised onion and brie mini quiches

Eggcellent quiches that add a delicious touch to any meal!
Ingredients:
  • 3 sheets frozen ready-rolled shortcrust pastry, partially thawed
  • 4 eggs
  • 63.13 gm pure cream
  • 62.50 ml finely grated parmesan cheese
  • 125.00 ml caramelised onion, with rosemary (see notes)
  • 125g brie cheese, cut into 24 pieces
  • 20.00 ml fresh rosemary leaves
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Use a 7cm-round cutter to cut out 24 pastry rounds. Gently press the rounds into the holes of two 12-hole patty pans with 1 1/2 tablespoon capacity each.
  • In a large jug, combine eggs, cream, and Parmesan. Season with salt and pepper. Spoon onion into pastry cases, top with Brie, and pour over the egg mixture. Sprinkle with rosemary and bake for 12 to 15 minutes until golden and set. Serve.
