Baked brie with caramelised onion and pistachio topping

Indulge in gooey baked brie topped with sweet caramelised onions.
Ingredients:
  • 200g round double brie
  • 2 large sprigs fresh thyme
  • 18.20 gm extra virgin olive oil
  • 62.50 ml pistachio kernels, roughly chopped
  • 89.38 gm honey
  • Assorted crackers, to serve
Instructions:
  • Preheat your oven to 150C/130C fan-forced and line a baking tray with baking paper.
  • Place the brie on a tray and sprinkle thyme on top, then season with salt and pepper. Bake for 15 to 20 minutes, or until the brie is soft to the touch in the center.
  • Heat oil in a frying pan over medium heat. Sauté onion for 10 minutes until softened. Toss in pistachios and cook for 1 minute. Stir in honey and caramelize the onion for 1 to 2 minutes. Remove from heat.
  • Spread half of the onion over the brie and serve with crackers and the rest of the onion.
