Start your Christmas morning right with festive eggnog French toast.
Ingredients:
  • 1 loaf unsliced white bread, cut into 2cm-thick slices
  • 6 eggs, at room temperature
  • 125ml (1/2 cup) thin cream
  • 60ml (1/4 cup) brandy
  • 40.00 ml dark rum
  • 60g (1/4 cup) caster sugar
  • 2.50 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • Vegetable oil, to fry
  • Strawberries, hulled, sliced, to serve
Instructions:
  • Cut perfect rounds from the bread slices using an 8cm round cutter.
  • Combine the eggs, cream, brandy, rum, sugar, cinnamon, and nutmeg in a large bowl. Whisk vigorously until the sugar fully dissolves. Pour 310ml (1 1/4 cups) of the eggnog into a serving jug and keep it aside.
  • Pour oil into a medium frying pan until it reaches a 1cm depth. Heat over medium heat. Dip 1 bread round at a time in the leftover eggnog and add to the pan (cook 4 rounds at once). Cook for 30 seconds per side or until they puff up and turn light golden. Transfer to a plate and lightly cover with foil. Repeat with the rest of the bread rounds and eggnog.
  • Serve French toast on individual plates and generously drizzle with the luscious reserved eggnog. Accompany with fresh strawberries and a side of the reserved eggnog for a delightful indulgence. Enjoy while warm.
