Eggnog Pound Cake

Ingredients:
  • 1 cup sugar
  • 1/2 cup butter or margarine, softened
  • 2 tablespoons rum or 2 teaspoons rum extract
  • 1 teaspoon vanilla
  • 5 egg yolks
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup milk
Instructions:
  • Preheat your oven to 350°F. Grease and dust a 9x5x3 inch loaf pan with flour.
  • In a large bowl, use an electric mixer to combine sugar, butter, rum, vanilla, and egg yolks on low speed for 30 seconds, scraping the bowl constantly. Increase the speed to high and beat for 5 minutes, scraping the bowl occasionally. Gradually add flour, baking powder, salt, nutmeg, and milk, alternating between them on low speed. Transfer the mixture into a pan.
  • Bake until a toothpick inserted in the center comes out clean, about 50 to 60 minutes. Allow to cool for 10 minutes, then remove from the pan and cool completely on a wire rack. Store covered at room temperature for up to 2 days.
