Indulge in a weekend breakfast of crispy bacon potato hash topped with two perfectly cooked over easy eggs.
Ingredients:
  • 2 slices bacon
  • 1 tablespoon ghee (clarified butter)
  • 0.5 medium potato, peeled and chopped
  • 0.25 medium onion, chopped
  • 1 teaspoon pink Himalayan salt, divided
  • 1 teaspoon ground black pepper, divided
  • 0.125 cup chopped kale
  • 0.25 teaspoon truffle oil, or to taste
  • 2 large eggs
Instructions:
  • Cook the bacon in a skillet over medium-high heat, flipping occasionally, until perfectly browned, approximately 10 minutes. Place the cooked bacon on paper towels to drain.
  • Combine ghee with the bacon drippings in the pan. Add in potato, onion, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Sauté until potatoes are tender, approximately 10 minutes. Stir in kale towards the end. Transfer the potatoes to a plate and sprinkle crumbled bacon on top. Lower the heat on the pan.
  • Once the pan has cooled, crack the eggs into it and season with the remaining salt and pepper. Cook until the eggs are almost completely set but still soft, for about 1 1/2 to 2 minutes. Flip the eggs carefully and cook until the whites are completely set, for about 30 seconds more. Slide the eggs gently on top of the potato hash, drizzle with truffle oil, and serve.
