Chinese Eight Treasure Dessert: Simmer 8 ingredients for a comforting porridge.
Ingredients:
  • 0.25 cup dried small red beans (adzuki beans)
  • water to cover
  • 0.25 cup barley
  • 0.5 cup glutinous sweet rice
  • 0.25 cup dried mung bean
  • 0.25 cup oats
  • 0.25 cup millet
  • 0.25 cup dried small pearl tapioca
  • 0.5 cup brown sugar, or more to taste
  • 0.25 cup raisins
Instructions:
  • In a spacious container, submerge red beans under cool water by several inches; soak for 3 hours to overnight. Drain and rinse thoroughly.
  • In a pot, mix red beans and barley together and fill with enough water to reach halfway up the pot. Boil, then lower heat, cover, and simmer until beans and barley are tender, approximately 1 hour.
  • Stir in rice into bean-barley mixture and add more water if needed. Simmer for 20 minutes. Mix in mung beans and simmer for another 20 minutes.
  • Combine oats, millet, and tapioca with rice mixture and cook, stirring every 5 minutes until grains are softened, about 20 minutes. Adjust water for desired thickness. Mix in brown sugar and raisins and cook for an additional 5 minutes. Remove from heat, stirring occasionally to prevent sticking. Serve hot or chilled.
