Elegant Marsala mushroom dish baked in puff pastry for simple sophistication.
Ingredients:
  • 6 tablespoons butter, divided
  • 1.5 pounds baby bella (crimini) mushrooms, sliced
  • 0.25 cup chopped sweet onion
  • 0.5 lemon, juiced
  • 0.5 teaspoon dried thyme
  • 5 tablespoons all-purpose flour
  • 1.25 cups Swanson® Chicken Broth
  • 0.33333334326744 cup Marsala wine
  • 2 tablespoons half-and-half
  • 1 (17.3 ounce) package frozen puff pastry, thawed
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C, then generously coat a 9-inch pie plate with non-fat cooking spray.
  • In a large skillet over medium heat, melt 3 tablespoons of butter until shimmering. Cook mushrooms and onions, stirring occasionally, for about 10 minutes until the mushroom liquid evaporates. Add lemon juice and thyme, then simmer for 2 minutes.
  • In a saucepan, melt 3 tablespoons of butter. Add flour and stir for about 1 minute. Slowly whisk in Swanson® Chicken Broth, Marsala, and half-and-half until the sauce is smooth and thickened, about 3 minutes. Season with salt and pepper to taste.
  • Add the cooked mushrooms to the flavorful Marsala sauce; mix everything together.
  • Roll out the puff pastry sheet to fit the pie plate, ensuring it covers the bottom and sides. Trim any excess pastry. Fill the pastry shell with the mushroom mixture.
  • Place the second sheet of puff pastry on top, trim and crimp the edges to seal. Cut a few slits on top to let steam escape, then brush with beaten egg.
  • Place your delicious pie in the oven and bake until golden brown, and the mushroom mixture is bubbling, approximately 40 minutes. Let the pie cool a bit before serving.
