Elegant Orange-Almond Chicken

Tender chicken coated in a delicious almond mushroom sauce. Delicious!
Ingredients:
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cut-up whole chicken (3 to 3 1/2 pounds)
  • 2 tablespoons vegetable oil
  • 3 cups sliced fresh mushrooms (8 ounces)
  • 1/4 cup orange juice
  • 1/4 cup almond-flavored liqueur or orange juice
  • 2 tablespoons sliced almonds
  • 2 tablespoons chopped fresh cilantro or parsley
Instructions:
  • Combine flour, salt, and pepper to create a flavorful coating for the chicken. Dredge the chicken in the flour mixture for a crispy outer layer.
  • Heat oil in a large skillet over medium heat until hot.
  • Brown the chicken in oil for approximately 15 minutes, turning occasionally until all sides are golden. Then cover and simmer over low heat for about 20 minutes until the juices run clear when the thickest part is cut. Use tongs to transfer the chicken from the skillet and keep it warm.
  • Keep 1 tablespoon drippings in the skillet and sauté mushrooms over medium heat for about 2 minutes, stirring occasionally, until tender. Remove mushrooms from skillet.
  • - Preheat the skillet over medium-high heat, then pour in the orange juice and liqueur. Cook for 1 to 2 minutes, stirring constantly and scraping up any brown bits until the mixture slightly thickens. Add mushrooms and heat through. Serve over chicken and garnish with almonds and cilantro.
