Elegant orange olive oil cake with cornmeal for a unique flavor and texture.
Ingredients:
  • 1.3333333730698 cups white sugar, divided
  • 2 large eggs, beaten
  • 0.5 cup olive oil
  • 0.5 cup orange juice
  • 1.25 cups all-purpose flour
  • 0.5 cup finely ground yellow cornmeal
  • zest from 1 orange
  • 2 teaspoons baking powder
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Prepare your 8-inch round cake pan by greasing the bottom and sides, then line it with parchment paper and grease the top of the paper.
  • In a large bowl, whisk together 1 cup of sugar, eggs, olive oil, and orange juice until smooth. Add flour, cornmeal, orange zest, baking powder, and salt, then lightly whisk the wet and dry ingredients together. Pour the batter into the prepared pan and sprinkle the remaining sugar on top.
  • -Bake in the preheated oven until a toothpick inserted into the center comes out clean, for 25 to 35 minutes. -Allow the cake to cool in the pan for 20 minutes. -Loosen the cake by running a knife along the inside edge of the pan and invert it onto a plate. -Flip the cake from the plate onto a cooling rack to cool completely.
