Ingredients:
  • 3 eggs
  • 1 cup monk fruit sugar substitute
  • 0.66666668653488 cup olive oil
  • 2 medium oranges, zested and juiced
  • 1 teaspoon vanilla extract
  • 2.25 cups oat flour
  • 2 teaspoons baking powder
Instructions:
  • Preheat oven to 375°F (190°C) and prepare a 9x13-inch baking pan by greasing and flouring it.
  • In a large bowl, whisk together eggs with monk fruit sweetener and olive oil. Fold in orange zest, orange juice, and vanilla extract.
  • In a separate bowl, mix together the flour and baking powder. Gently fold the mixture into the eggs until just combined. Transfer the batter into the prepared pan.
