Elephant Cake

Versatile cake perfect for jungle, baby shower, or circus themed parties.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • Tray or cardboard (18x14 inches), covered with paper and plastic food wrap or foil
  • 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • Food color
  • 2 small round chocolate-covered creamy mints
  • 4 large black gumdrops
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans), then generously grease 2 (9-inch) round cake pans with shortening or cooking spray.
  • Prepare and bake the cake mix as instructed on the box for 9-inch round pans. Allow the cakes to cool for 10 minutes, then carefully remove them from the pans onto cooling racks. Let the cakes cool completely for about 1 hour. For convenient handling, chill or freeze the cakes for 30 minutes to 1 hour until they are firm.
  • Follow the provided template to sculpt the elephant shape from the cake. Begin by cutting a 1-inch slice from the edge of the cake, about 2 inches deep into the cake. Then carefully cut a small inverted U-shape piece to create the trunk. Place the main body of the elephant on a serving tray. Use the remaining cake to shape the trunk from the U-shaped piece and the tail from the trimmed sections. Place the trunk and tail pieces next to the body. Repeat this process with the rest of the cake, flipping the template as needed to create a pair of facing elephants.
  • Transfer the frosting into a spacious bowl. Gradually mix in the food coloring until you achieve your desired hue. Coat the cake pieces with a thin layer of frosting to lock in the crumbs. Chill the cake in the refrigerator or freezer for 30 to 60 minutes to allow the frosting to set.
  • Cover the entire cake with the remaining frosting. Use mints to create eyes. Press two gumdrops together and roll them out on a sugared surface to make a thin sheet. Repeat this step with two more gumdrops. Cut the gumdrop sheets into ear shapes as shown in the diagram. Attach the ears to the frosting on the elephant. Cut toe shapes from the leftover gumdrop sheet and place them on the bottom of the elephant legs.
