Simple palmiers made with puff pastry and sugar.
Ingredients:
  • Lots of granulated sugar
  • Puff pastry
  • Parchment Paper (aka baking paper) or a Silpat baking mat
Instructions:
  • Prepare the puff pastry: Preheat oven to 400°F. Sprinkle 1/4 cup of sugar over your workstation. Roll out the puff pastry to 10X12 inches and sprinkle another 1/4 cup of sugar (and spices if desired) over the dough.
  • Roll left and right edges inward to meet in the middle, ensuring they touch. If needed, repeat with any additional puff pastry.
  • Refrigerate the dough for a minimum of 30 minutes.
  • Slice the cookie dough logs into 1/2-inch thick slices. Sprinkle sugar on both sides of each slice. Pinch the sides together to prevent unrolling while baking.
  • Arrange the palmiers on parchment-lined baking sheets, making sure to leave ample space between each cookie. Only bake twelve cookies at a time to allow for expansion.
  • Bake the tray in the center of the oven at 400°F for 10-15 minutes or until the sugar caramelizes.
  • Let them cool on a rack for 10 minutes before serving. Enjoy!
