Ingredients:
  • 165.00 ml pecan nuts
  • 111.38 gm maple syrup
  • 2 sheets frozen ready-rolled puff pastry, partially-thawed
Instructions:
  • - Preheat the oven to 210°C and line 2 baking trays with non-stick baking paper. - In a food processor, finely chop pecans. - Add maple syrup and blend until mixture is well combined.
  • Lay 1 pastry sheet on a work surface. Spread with half of the pecan mixture, then tightly roll the pastry from the closest side towards the center. Repeat on the other side. Cut the roll into 1cm-thick slices using a sharp knife. Arrange palmiers on trays, leaving space between each. Repeat the process with the remaining pastry and pecan mixture.
  • Bake palmiers for 10 minutes, then swap trays in oven and continue baking for 3 to 5 minutes until puffed and golden. Serve warm or cold.
