Salted Pecan-Maple Ice Cream

Homemade candied pecans elevate maple ice cream with a perfect balance of salty sweetness and rich creaminess, reminiscent of indulgent pralines.
Ingredients:
  • 0.5 cup coarsely chopped pecans
  • 2 tablespoons white sugar
  • 0.5 teaspoon sea salt, or to taste
  • 0.75 cup white sugar
  • 0.25 cup real maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 drop maple-flavored extract, or to taste
  • 3 cups half-and-half
  • 1 pinch coarse sea salt, or to taste
Instructions:
  • Toast pecans in a heavy saucepan over medium heat, stirring constantly, until fragrant, for 1 to 2 minutes.
  • Sprinkle 2 tablespoons sugar over pecans and stir constantly until the sugar caramelizes into a golden-brown syrup, coating the pecans. Remove from heat and sprinkle with 1/2 teaspoon sea salt.
  • Transfer the warm pecans onto a sheet of parchment paper to cool completely. Break up any large chunks and reserve the candied pecans for later use.
  • In a large bowl, combine 3/4 cup sugar, maple syrup, eggs, vanilla extract, and maple flavoring. Whisk until smooth, then gradually pour in the half-and-half.
  • Transfer the mixture into an ice cream maker and freeze following the manufacturer's guidelines. Gently fold in the candied pecans as the ice cream begins to set. Serve with a light sprinkle of coarsely ground sea salt for added flavor.
