Pecan-maple crusted baked salmon - a delicious and healthy meal for paleo, gluten-free, and dairy-free diets.
Ingredients:
  • 4 (4 ounce) fillets salmon
  • salt and ground black pepper to taste
  • 0.5 cup pecans
  • 3 tablespoons pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chipotle pepper powder
  • 0.5 teaspoon onion powder
Instructions:
  • Lay out the salmon fillets on a baking sheet and generously season them with salt and freshly cracked black pepper.
  • In a food processor, blend pecans, maple syrup, vinegar, paprika, chipotle powder, and onion powder until crumbly. Spread the pecan mixture over each salmon fillet, ensuring full coverage. Refrigerate the salmon uncovered for 2 to 3 hours.
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Roast the salmon in the oven until it easily flakes with a fork, about 12 to 14 minutes.
