Elvis-inspired pancakes with peanut butter, banana, and chocolate chips.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons brown sugar
  • 1 egg, beaten
  • 3 tablespoons butter, melted
  • 0.25 cup peanut butter
  • 0.25 cup chocolate chips
  • 1 ripe banana, diced
Instructions:
  • In a bowl, whisk together flour, baking powder, salt, and brown sugar. In another bowl, beat egg and milk, then stir in peanut butter until smooth. Combine the milk mixture with the dry ingredients just until moistened. Whisk in melted butter and vanilla extract. Gently fold in chocolate chips and diced banana into the batter.
  • Preheat a large nonstick skillet over medium heat. Pour 1/4 cup of batter per pancake into the center of the skillet. Allow the pancake to cook until the bottom is golden brown and small bubbles form on top, approximately 2 minutes. Flip and cook the other side until golden brown and the pancake is cooked through, about 2 to 3 minutes. Repeat with the rest of the batter.
