Wholesome energy balls packed with oats, seeds, nuts, dates, and raisins - ideal for snacking.
Ingredients:
  • 1 cup rolled oats
  • 0.5 cup pumpkin seeds
  • 0.5 cup walnuts
  • 0.5 cup pecans
  • 15 pitted Medjool dates
  • 0.5 cup brown rice syrup
  • 1 cup mini chocolate chips
  • 0.5 cup shredded coconut
  • 0.25 cup sunflower seeds
Instructions:
  • Process oats in a food processor until coarse. Add pumpkin seeds, walnuts, and pecans; pulse until desired chunkiness, about 10 to 15 times.
  • Place the dates in the food processor and blend for 30 seconds. Slowly add the rice syrup while the processor is running until the mixture comes together and forms a ball.
  • Combine chocolate chips, coconut, raisins, and sunflower seeds in a bowl. Divide the dough into 25 gram portions and roll each into balls. Arrange the balls on a single layer on a cookie sheet, ensuring they are not stacked but can touch.
  • Chill in the fridge for 2 to 24 hours before serving.
