Ingredients:
  • 275g caster sugar
  • 300g plain flour
  • 5.00 gm ground cinnamon
  • 8.00 gm baking powder
  • 170.00 gm sultanas
  • 500.00 ml grated carrot
  • 250.00 ml grated apple
  • 85.00 gm desiccated coconut
  • 115.00 gm chopped walnuts
  • 250ml vegetable oil
  • 4.40 gm vanilla extract
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C and line muffin pans with 18 paper cases.
  • In a large bowl, combine sifted sugar, flour, cinnamon, and baking powder. Add sultanas, grated carrot, diced apple, shredded coconut, and chopped walnuts. In a separate bowl, whisk together eggs, oil, and vanilla extract.
  • Combine the dry ingredients and fold gently until just mixed, being careful not to overmix.
  • Divide the batter into muffin pans and bake until golden brown, about 25 minutes. Dust with icing sugar before serving.
