Energizing breakfast loaf with oats, peanut butter, banana, and chocolate chips for a delicious morning pick-me-up.
Ingredients:
  • 2 cups oats
  • 1 cup all-purpose flour
  • 0.33333334326744 cup brown sugar
  • 3 tablespoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1.5 cups milk
  • 0.5 cup unsweetened applesauce
  • 6 tablespoons honey
  • 0.25 cup peanut butter
  • 1 tablespoon vanilla extract
  • 2 eggs, beaten
  • 3 ripe bananas, mashed
  • 0.25 cup milk chocolate chips
  • 0.25 cup semisweet chocolate chips
  • 1 teaspoon all-purpose flour, or as needed
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease an 8-inch square baking pan.
  • In a bowl, mix oats, 1 cup flour, brown sugar, cinnamon, salt, and baking powder. In a separate large bowl, whisk together milk, applesauce, honey, peanut butter, and vanilla until smooth; add eggs and combine. Gently fold in the oats mixture until just combined, then stir in the bananas. Pour half of the batter into the prepared baking pan.
  • Place in the heated oven and bake until partially cooked, approximately 5 minutes. Take the pan out of the oven and allow it to cool entirely.
  • Combine milk chocolate chips, semisweet chocolate chips, and 1 teaspoon of flour in a bowl, ensuring the chips are evenly coated with flour. Add additional flour if necessary. Sprinkle the coated chips over the cooled loaf and layer the remaining batter on top.
  • Bake until the loaf is golden brown and cooked through, for 35-45 minutes.
