Impress guests at your engagement celebration with this stunning cake!
Ingredients:
  • 2 x 340g packets golden buttercake cake mix or 2 quantities Homemade buttercake (see related recipe)
  • 125.00 ml apricot jam, warmed, strained
  • 62.50 ml large oval silver cachous
  • 40.00 ml silver and pink cachous
  • 1 tsp small silver cachous
  • 475g butter, softened
  • 675.00 gm icing sugar mixture
  • 61.80 gm milk
  • Bright white food colouring
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced). Grease two 20cm round cake pans that are 7cm deep and line the base and sides with baking paper.
  • Follow the instructions on the cake mix packet or make homemade cakes as per the related recipe. Divide the batter evenly between the pans. Bake for 45 minutes or until a toothpick comes out clean. Let the cakes rest in the pans for 5 minutes before transferring them to a wire rack to cool completely.
  • Prepare the icing: With an electric mixer, whip the butter in a bowl until light in color. Slowly incorporate the mixture of icing sugar and milk, while continuously beating until well blended.
  • Color icing white by mixing in food coloring. Level cake tops using a serrated knife as needed. Cut each cake in half horizontally. Start by placing the bottom of one cake on a cake board. Spread 2 tablespoons of jam followed by 1/3 cup of icing. Add another cake layer on top and repeat the process, finishing with a cake layer.
  • Cover the cake with the remaining icing, smoothing it out with a hot knife. Decorate by placing large cachous around the base and smaller ones on top and the sides. Finally, serve and enjoy!
