Gemstone-inspired rock candy tops these bite-sized treats for a touch of elegance.
Ingredients:
  • 2 cups powdered sugar
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 3 to 4 tablespoons milk
  • Assorted colored rock candy
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and line 58 mini muffin cups with paper baking cups.
  • Prepare the cake batter according to the instructions on the box. Fill each muffin cup with the batter, ensuring they are two-thirds full. Any extra batter can be stored in the refrigerator until needed.
  • Bake for 11 to 14 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 5 minutes, then remove from the pan and transfer to a cooling rack. Let it cool completely for about 30 minutes.
  • Combine powdered sugar and milk until smooth in a small bowl. Adjust the consistency by adding milk 1 teaspoon at a time. Frost cupcakes, top with rock candy pieces, and store loosely covered.
