Delicious mini pizzas, ideal for a quick snack.
Ingredients:
  • 4 English muffins, halved, toasted
  • 125ml tomato sauce
  • 1 roasted red capsicum, thickly sliced
  • 20.00 ml capers, rinsed, drained
  • 80g ricotta
  • 20.00 ml oregano leaves, to garnish
Instructions:
  • - Preheat your oven to 180°C. - Spread sauce over the muffins, then generously sprinkle all ingredients (except oregano) on top.
  • Heat in the oven for approximately 2 minutes, then sprinkle with oregano. Optional toppings include pesto with feta and roasted pumpkin, or chunky tomato sauce with melted mozzarella, basil, and chili flakes.
