Deluxe English muffin pizzas topped with gooey melted Mozzarella, savory ham, fresh tomatoes, and sweet caramelized onions.
Ingredients:
  • 6 English muffin halves
  • 1 cup grated Mozzarella cheese, packed
  • 1 medium onion, thinly sliced
  • 3/4 cup diced ham
  • A pinch of chopped fresh sage
  • 1/4 teaspoon stoneground mustard
  • Optional: A few slices of fresh tomato
Instructions:
  • Heat your oven to 425°F.
  • In a skillet over medium-high heat, melt butter. Cook onions until translucent for about 5 minutes. Add diced ham and cook for an additional 5 minutes. Stir in sage and mustard, then remove from heat.
  • Prepare the muffin pizzas by placing the muffin halves, open side up, on a baking pan. Evenly spread the cheese over the muffin halves, then add the onion and ham mixture on top. For extra flavor, layer tomato slices between the cheese and onion mixture.
  • After baking at 425°F for 8-9 minutes, until the muffins and toppings are nicely browned but not burnt, you can either cut them into quarters for appetizers or enjoy them whole for a meal or snack.
