Irresistible focaccia with gooey mozzarella, sweet caramelized onions, and savory Parmesan - a taste of Italy in every bite!
Ingredients:
  • 3/4 cup water
  • 2 tablespoons olive or vegetable oil
  • 2 cups bread flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons bread machine yeast
  • 1/4 cup butter
  • 4 large onions, sliced
  • 3/4 cup shredded mozzarella cheese (3 ounces)
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Carefully measure all dough ingredients and add them to the bread machine pan in the order specified by the manufacturer.
  • Choose the Dough/Manual cycle, avoiding the Delay cycle option.
  • Prepare the cookie sheet by greasing it. Shape the dough into a 12-inch circle on the cookie sheet. Cover the dough and let it rise in a warm place for about 30 minutes or until it has nearly doubled in size.
  • In a large skillet, melt butter over medium heat. Cook onions for 25 to 30 minutes, stirring occasionally, until they are beautifully browned and caramelized. Remove from heat.
  • Preheat oven to 400°F. Use your fingertips or the handle of a wooden spoon to create deep indentations in the dough at 1-inch intervals. Evenly distribute the onions over the dough and sprinkle with cheeses. Bake for 15 to 18 minutes, or until the edges are golden brown. Transfer to a cooling rack once done. Serve warm and cut into wedges or squares.
