Elevate focaccia with fontina cheese, arugula, and ripe organic tomatoes for a delicious appetizer.
Ingredients:
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 large onion, cut in half, thinly sliced
  • 1 focaccia bread (10 to 12 inch)
  • 1 cup shredded fontina cheese (4 oz)
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
  • 1/2 cup chopped arugula
Instructions:
  • Preheat oven to 350°F. In a 10-inch skillet over medium heat, combine oil and butter. Sauté onion for 8 to 10 minutes, stirring often, until soft and lightly golden.
  • Place the focaccia on an ungreased cookie sheet. Sprinkle 3/4 cup of cheese on top of the focaccia. Add the onion and tomatoes, then sprinkle the remaining 1/4 cup of cheese over the top.
  • Bake for 10 to 15 minutes until the cheese is bubbly and the bread is toasty. Top with fresh arugula before serving.
