Quick and delicious pizza with sausage and caramelized onion. Ready in 30 minutes.
Ingredients:
  • 2 tsp (7g/1 sachet) dried yeast
  • 250ml (1 cup) warm water
  • 450g (3 cups) plain flour
  • 1 tsp bread improver
  • 1.20 gm salt
  • Plain flour, to dust
  • Olive oil, to grease
  • 40g butter
  • 4 red onions, halved, thickly sliced
  • 2 garlic cloves, crushed
  • 30.00 gm caster sugar
  • 20.00 ml red wine vinegar
  • 2 tsp fresh thyme leaves
  • Salt & freshly ground black pepper
  • 4 (about 400g) English-style beef sausages, skin removed, chopped
  • 200g (2 cups) coarsely grated mozzarella
  • Baby rocket leaves, to serve
Instructions:
  • In a small bowl, mix yeast and water together. Let it rest in a cozy, draft-free spot for 10 minutes or until it becomes frothy.
  • In a large bowl, combine the sifted flour, bread improver, and salt. Create a well in the center and pour in the yeast mixture and extra virgin olive oil. Mix with a wooden spoon until combined, then use your hands to bring the dough together in the bowl.
  • Transfer the dough to a lightly floured surface and knead for 10-15 minutes until it's smooth and elastic. Brush a bowl with oil to grease it lightly, place the dough in the bowl, and coat it with oil. Cover with plastic wrap or a damp tea towel and let it prove in a warm, draft-free place for 1 hour or until it doubles in size.
  • In a frying pan, melt butter over medium-low heat until foamy. Sauté onion and garlic for 15 minutes until onion softens and browns. Stir in sugar, vinegar, and thyme; caramelize for 5 minutes. Remove from heat, transfer to a heatproof bowl, and season with salt and pepper to taste.
  • In the same pan over medium-high heat, cook the sausage, stirring occasionally, for 5 minutes until golden brown. Remove from heat and set aside.
  • Preheat oven to 220°C. Grease two 28cm-diameter pizza trays with oil. Gently press down the centre of the dough. Knead on a floured surface for 2-3 minutes until smooth and elastic. Divide dough in half, wrap one portion in plastic wrap. Roll out the other half on a floured surface to fit one of the trays. Transfer the dough to the tray and prick all over with a fork. Repeat with the remaining dough.
  • Sprinkle mozzarella evenly over pizza bases, then add sliced onion and sausage. Bake in a preheated oven for 12 minutes or until golden brown. Switch trays halfway through baking. Remove from oven and top pizzas with fresh rocket leaves before serving hot.
