Satisfy a crowd with savory sausage sandwiches oozing with melted cheese and sweet caramelized onions. Indulge now!
Ingredients:
  • 3 large red onions, thinly sliced
  • 55g brown sugar
  • 40.00 ml balsamic vinegar
  • 2 x 200g pkts Perino tomatoes
  • Olive oil spray
  • 1.7kg Thin Barbecue Beef Sausages
  • 11 Pane Di Casa Rolls
  • 240g cheddar cheese
  • 120g pkt Baby Rocket Leaves
  • Oven-baked chips, to serve
Instructions:
  • Preheat the oven to 180C. In a large frying pan over low heat, gently sauté the onion for 15-20 minutes until golden and beginning to caramelize, stirring occasionally. Stir in the sugar and vinegar and continue cooking for an additional 10 minutes until caramelized.
  • Place tomatoes on a baking tray lined with parchment paper, drizzle with oil and season with salt and pepper. Roast in the oven for 12-15 minutes until blistered. Allow to cool slightly before transferring to a bowl, adding rocket, and tossing to combine.
  • Preheat a barbecue grill or chargrill to medium heat. Cook sausages, turning occasionally, for 8-10 minutes or until they are fully cooked.
  • - Preheat the grill on high heat. - Slice the rolls almost all the way through on the top side. - Set aside 1/4 cup of caramelized onion. - Fill the rolls with the remaining caramelized onion and place 2 sausages in each roll. - Sprinkle cheddar on top. - Grill for 1-2 minutes until the cheddar is melted and golden. - Garnish with the reserved caramelized onion. - Serve with salad and chips.
