Enjoy a flavorful sausage tart paired with a refreshing green salad for a satisfying lunch.
Ingredients:
  • 56.88 gm olive oil
  • 1kg brown onions, thinly sliced
  • 45.00 gm brown sugar
  • 62.50 ml balsamic vinegar
  • 5 thin herb and garlic sausages
  • 2 sheets ready-rolled puff pastry
  • 100g feta cheese, crumbled (see note)
  • 40.00 ml flat-leaf parsley
Instructions:
  • Preheat the oven to 200°C and prepare 2 baking trays by lining them with baking paper.
  • In a large frying pan over medium heat, heat oil. Add onions and cook until soft, about 3 minutes. Reduce heat to low and cook, stirring often, until onions are light golden, about 15 to 20 minutes. Stir in sugar and vinegar, then cook for an additional 5 minutes. Allow to cool before using.
  • Preheat a grill or frying pan over medium heat. Grill sausages for 6 minutes, or until fully cooked. Slice them thickly, then allow to cool.
  • Cut each pastry sheet in half. Lightly score a 1cm border around each half, being careful not to cut through the pastry completely. Place 2 rectangles on each baking tray.
  • Spread the savory onion mixture on the pastry inside the edges. Add the sausages and crumble some flavorful feta on top. Bake for 25 minutes or until the pastry is beautifully golden and puffed. Finish by sprinkling with fresh parsley and serve warm.
