Mini caramelised onion sausage rolls

Irresistible homemade sausage rolls brushed with flavor-packed onion jam.
Ingredients:
  • 500g pork mince
  • 115g (1 cup) fresh breadcrumbs
  • 1 egg, lightly beaten
  • 112g (1/3 cup) caramelised onion jam, plus 2 tbsp extra, plus extra to glaze
  • 1 small carrot, finely grated
  • 1 small zucchini, finely grated, squeezed of excess moisture
  • 100g pancetta or prosciutto, finely chopped
  • 1 tsp caraway seeds
  • 3 sheets puff pastry sheets
  • 41.20 gm milk
  • 6.00 gm sesame seeds
  • 2.40 gm salt flakes
Instructions:
  • Preheat the oven to 220C/200C fan-forced and line two oven trays with non-stick baking paper. In a large bowl, mix together pork mince, breadcrumbs, egg, onion jam, carrot, zucchini, pancetta, and half of the caraway seeds. Season with salt and pepper, then divide the mixture into 6 portions.
  • Cut each pastry sheet in half to create two strips. Divide the mince mixture evenly down the center of each pastry strip. Mix milk with 2 tablespoons of onion jam and lightly brush the pastry edges with the mixture. Roll up each strip to wrap and secure the pork mixture.
  • Flip rolls over so the seam is on the bottom. Cut each roll into 6 pieces and arrange on baking trays. Brush with the milk mixture and sprinkle with sesame seeds, salt flakes, and the rest of the caraway seeds. Bake for 25-30 minutes until the rolls are puffed and golden brown. Lightly brush the warm sausage rolls with extra heated onion jam.
