Delicious Salvadoran twist on classic Russian salad with beets, potatoes, eggs, and mayo.
Ingredients:
  • 3 beets, trimmed
  • 4 potatoes, peeled and cubed
  • 1 teaspoon salt
  • 0.5 cup mayonnaise, or to taste
Instructions:
  • In a saucepan, boil beets in water until tender, around 20 minutes. Cool, peel, dice, and chill.
  • Boil the potatoes in a saucepan with water and salt until tender but not mushy, about 15 minutes. Drain in a colander and chill before using.
  • Bring a saucepan of salted water to a gentle boil. Carefully lower the eggs into the water, ensuring they don't crack. Simmer for 15 minutes. Transfer the eggs to ice water to chill completely. Peel and dice the eggs.
  • Combine the cold beets, potatoes, and eggs in a salad bowl, then delicately fold in mayonnaise to your liking.
