Epic chocolate and beetroot cake

Fun and easy chocolate cake recipe perfect for baking with kids!
Ingredients:
  • olive oil
  • plain flour for dusting
  • 300 g good-quality dark chocolate (70% cocoa solids)
  • 250 g raw beetroot
  • 4 large free-range eggs
  • 150 g golden caster sugar
  • 120 g ground almonds
  • 1 teaspoon baking powder
  • 1 tablespoon good-quality cocoa powder
  • natural yoghurt to serve
Instructions:
  • - Preheat the oven to 180°C/350°F/gas 4 and lightly grease a 20cm springform cake tin with olive oil. Line the bottom with a circle of greaseproof paper and dust the sides lightly with flour. Melt 200g of chocolate in a heatproof bowl over simmering water. Peel and grate the beetroot, then mix with egg yolks, sugar, almonds, baking powder, cocoa powder, and melted chocolate. Whisk egg whites until stiff peaks form and fold into the beetroot mixture. Spread the batter in the cake tin and bake for about 50 minutes. Test doneness with a skewer. Cool the cake on a wire rack. Serve with melted chocolate and yogurt.
