Creamy, luscious ermine frosting: a velvety blend of roux, butter, and sugar for the ultimate icing perfection.
Ingredients:
  • 1.5 cups milk
  • 6 tablespoons all-purpose flour
  • 1.5 cups white sugar
  • 0.75 cup unsalted butter
  • 1 pinch salt to taste
Instructions:
  • In a saucepan over medium-high heat, combine milk and flour, stirring constantly until it thickens to a pudding-like consistency. Bring to a boil, then transfer to a heat-proof container. Cover the surface with parchment paper to prevent a skin from forming. Chill in the refrigerator for 8 hours to overnight.
  • Combine the sugar, butter, and salt in a stand mixer or using a hand mixer until the sugar is fully incorporated.
  • Take out the chilled milk mixture and stir gently to get rid of any lumps. Gradually pour it into the creamed butter mixture. Mix on low speed until fully combined. Pause the mixer and scrape down the sides of the bowl. Increase the speed to medium and beat until the frosting becomes light and fluffy, around 5 to 10 minutes. Add the vanilla extract and mix well.
