Escarole salad with Kalamata olives, lemon juice, and capers. Perfect as a side or potato topping. Serves two generously.
Ingredients:
  • 3 tablespoons olive oil
  • 2 medium heads escarole - rinsed, dried and chopped
  • 0.5 cup lemon juice
  • 2 tablespoons capers
  • 10 kalamata olives
Instructions:
  • - Heat oil in a wok on high heat, then add escarole and cook until starting to wilt. - Mix in lemon juice, capers, salt, and olives, and stir for 15 seconds. - Season with black pepper and serve hot.
