Elevate Halloween dessert with spooky eyeball brownie pops coated in candy and adorned with candies.
Ingredients:
  • 1 box (1 lb 3.5 oz) chocolate fudge brownie mix
  • Water, vegetable oil and eggs called for on brownie mix box
  • 16 oz vanilla-flavored candy coating (almond bark)
  • 36 paper lollipop sticks
  • 36 green ring-shaped gummy candies or fruit-flavored ring-shaped hard candies
  • 36 brown miniature candy-coated chocolate candies
  • Red food decorating pen or 1 tube (0.68 oz) red decorating gel, if desired
Instructions:
  • Preheat the oven to 350°F and generously grease the bottom of a 9-inch square pan with shortening or cooking spray. Follow the instructions on the box to make and bake the brownies for a 9-inch pan using water, oil, and eggs. Allow them to cool fully before serving.
  • Prepare a cookie sheet lined with waxed paper. Use a cookie scoop to form 36 (1 1/2-inch) balls out of the brownie mixture. Roll the balls between your hands to create smooth edges and place them on the cookie sheet. Chill in the refrigerator to keep them firm.
  • Prepare a second cookie sheet with waxed paper. In a medium microwavable bowl, heat the candy coating uncovered in the microwave on Medium (50%) for 1 minute, then in 15-second intervals until it melts; stir until smooth. Take a few brownie balls at a time from the refrigerator. Dip the tip of a lollipop stick about 1/2 inch into the melted coating and insert the stick straight into the brownie ball halfway. Coat the brownie pop with the melted mixture, allowing excess to drip off, and place it on the cookie sheet. Quickly attach green gummy candies and press brown candies in the center for pupils. Let them sit until firm. Use a food decorating pen to create veins on the eyeball pops.
