Creamy restaurant-style hummus with lemon using chickpea soaking liquid for extra creaminess.
Ingredients:
  • 1.5 (15.5 ounce) cans garbanzo beans, drained with liquid (aquafaba) reserved
  • 0.33333334326744 cup fresh lemon juice
  • 0.25 cup well-stirred tahini (Middle Eastern sesame paste)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 0.125 teaspoon ground cayenne
  • 0.125 teaspoon white sugar
  • 1 pinch salt and ground black pepper
Instructions:
  • Combine garbanzo beans, 1 1/2 tablespoons reserved aquafaba, and lemon juice in a food processor. Allow flavors to meld for 15 minutes.
  • Roughly chop soaked garbanzo beans by pulsing them. Blend in tahini, olive oil, garlic, cayenne, sugar, salt, and black pepper. Gradually add reserved aquafaba to achieve desired smoothness for the hummus.
