Indulgent chicken Cordon Bleu casserole with ham, Swiss cheese, noodles, and garlic crouton topping. Easy way to use leftover chicken.
Ingredients:
  • 8 ounces egg noodles
  • 1/2 cup butter
  • 1/2 cup flour
  • 1/2 cup half-and-half
  • 1 1/2 cup milk (I used 1%)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoon white wine
  • 6 ounces shredded Swiss cheese
  • 2 cups cubed cooked chicken
  • 5 ounces diced ham
  • 1 cup garlic butter croutons
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon melted butter
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  • 1. Bring a large pot of lightly salted water to a rolling boil. Add noodles and cook until tender yet firm to the bite, 5 to 8 minutes, stirring occasionally. Drain.
  • Prepare a luscious roux by melting butter in a saucepan over gentle heat. Stir in flour and cook until it turns bubbly and light brown, around 5 minutes. Add milk, half-and-half, salt, and pepper, and simmer while stirring until the mixture thickens.
  • Take the pot off the heat and gently fold in the white wine, Swiss cheese, diced chicken, and ham until everything is well combined.
  • Combine the cooked noodles and chicken in a large bowl until evenly combined, then transfer the mixture to the casserole dish.
  • Combine croutons and Parmesan in a food processor and pulse until finely ground. Add melted butter and pulse briefly to mix. Sprinkle the casserole with the crouton mixture.
  • Bake until golden brown and bubbly, about 30-40 minutes in the preheated oven.
