Try this fabulous chicken recipe!
Ingredients:
  • 168.75 gm maple syrup
  • 130.00 gm tomato sauce
  • 62.50 ml balsamic vinegar
  • 11.80 gm dijon mustard
  • 1kg mixed chicken pieces, such as thigh cutlets, drumsticks and wings
  • 2 medium brown onions, cut into wedges
  • 400g sweet potato, peeled, cut into 3cm pieces
  • Salad leaves, to serve
Instructions:
  • In a large glass or ceramic bowl, mix together maple syrup, tomato sauce, vinegar, and mustard. Add the chicken and toss until coated. Cover and refrigerate for 2 hours.
  • Preheat your oven to 180°C/160°C fan-forced and line a large baking dish with baking paper. Combine onion and potato with the chicken mixture, tossing gently until coated. Arrange the chicken, onion, and sweet potato in the dish, setting aside the maple syrup mixture for later.
  • Place the chicken in the oven and bake for 20 minutes. Afterward, generously brush the chicken with the maple syrup mixture that you had set aside. Return the chicken to the oven and bake for an additional 15 to 20 minutes, or until it turns golden and is fully cooked. Finish by sprinkling some fresh parsley over the chicken. Serve the deliciously glazed chicken alongside some crisp salad leaves.
