Maple-glazed chicken with crispy skin, a simple mid-week meal with just six ingredients.
Ingredients:
  • 6 chicken thigh cutlets, excess fat trimmed
  • 1/2 (about 1kg) butternut pumpkin, peeled, deseeded, cut into 1cm pieces
  • 1 large red onion, cut into 12 wedges
  • 60g butter
  • 60ml (¼ cup) maple syrup
  • 200g green beans, trimmed
Instructions:
  • Preheat your oven to 200C/180C fan forced. Line a large baking tray with baking paper and evenly place the chicken, pumpkin, and onion on it.
  • In a small saucepan, melt the butter with the maple syrup over low heat, stirring until smooth. Brush half of the mixture over the chicken and vegetables before baking for 30 minutes.
  • Brush the chicken with the delicious butter mixture, then introduce the beans to the tray. Gently brush everything with a touch of those flavorful pan juices. Bake for an additional 15 minutes, or until the chicken and veggies are perfectly cooked and beautifully golden.
