Garlic Roasted Chicken and Potatoes

Ingredients:
  • 0.25 cup butter
  • 6 chicken leg quarters, split into drumsticks and thighs
  • 6 large Yukon Gold potatoes, cut into chunks
  • 24 cloves garlic, unpeeled
  • 0.25 cup maple syrup
Instructions:
  • Preheat oven to 400°F (200°C).
  • In a roasting pan, melt the butter in the oven until fully melted. Swirl to evenly coat the bottom of the pan. Add chicken drumsticks, thighs, potatoes, and unpeeled garlic cloves. Sprinkle with salt and black pepper, then coat everything with the melted butter by gently tossing.
  • Roast the chicken in the preheated oven for about 40 minutes, basting with pan drippings 3 times, until fully cooked and juices run clear. Brush maple syrup over the chicken and spoon pan drippings over the potatoes before serving.
  • Continue baking until the chicken and potatoes are tender and beautifully browned, around 20 minutes more. Insert an instant-read thermometer into a thick part of a thigh to ensure it reads at least 165°F (74°C). Once ready, extract the softened garlic from the baked cloves and spread it over the chicken. Finish by generously pouring the delicious pan juices over the chicken and potatoes before serving.
