Chicken with Roasted Garlic Potatoes

Savory golden chicken and garlic roasted potatoes marry in a buttery Italian seasoning mix.
Ingredients:
  • 2 small heads garlic, unpeeled
  • 0.25 cup butter, at room temperature
  • 1 (.6 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
  • 1 teaspoon chopped fresh thyme
  • 0.5 teaspoon ground paprika
  • 1 (6 pound) roasting chicken
  • 1.5 pounds red new potatoes, halved
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then trim off and remove the top 1/2 inch of each garlic head.
  • In a large bowl, mix together butter, Italian dressing mix, thyme, and paprika until well combined.
  • Lay the chicken in a generously sized roasting pan and coat the chicken skin with half of the delicious butter mixture.
  • Toss the potatoes in the butter mixture until they are coated. Arrange the coated potatoes around the chicken in the pan and add the garlic heads with the cut-sides up.
  • Roast in the oven until fully cooked and juices run clear, about 1 hour 50 minutes. Use a thermometer to ensure the thigh reaches 180 degrees F (82 degrees C). Let it rest for 10 minutes before serving.
  • Once the chicken has finished resting, take the garlic out of the pan and let it cool for a bit. Remove the cloves from their skins and put half of them in a bowl. Mix them with the potatoes and then transfer to a platter.
  • Transfer the beautifully carved chicken to the serving platter.
  • Remove the fat from the pan drippings, then transfer them to a bowl. Mix in the mashed garlic and serve with chicken and potatoes.
