Indulge in succulent roast chicken alongside roasted garlic and gremolata sweet potatoes.
Ingredients:
  • 2 bulbs garlic
  • 25g butter, softened
  • 2.2kg Extra Large Whole Chicken
  • 4 small (about 200g each) orange sweet potatoes (kumara), quartered
  • 36.40 gm olive oil
  • 82.50 ml chopped flat-leaf parsley
  • 1 lemon, zested, juiced
  • Rosemary sprigs, to serve
Instructions:
  • Preheat your oven to 200°C. Gently release cloves from garlic bulbs, keeping the peel on. Massage butter onto the chicken skin and inside, then generously season with salt and pepper. Stuff half of the garlic cloves inside the cavity, and secure the legs with kitchen string.
  • Place the rest of the garlic cloves in a medium roasting pan, then lay the chicken on top. Pour 1 cup (250ml) water into the pan. Roast uncovered for 1 ½ hours until golden brown and fully cooked.
  • Toss sweet potatoes with half of the oil on a baking tray. Season with salt and pepper. Roast until golden and tender, about 40-45 minutes.
  • Extract the garlic from 3 roasted cloves. Finely chop. Combine in a large bowl with parsley, lemon zest, lemon juice, and sweet potato. Gently mix. Carve chicken and serve with extra roasted garlic, gremolata sweet potatoes, and rosemary sprigs on the side.
