Maple-glazed turkey

Revamp Christmas with a chic glazed turkey twist.
Ingredients:
  • 7kg turkey
  • 60g unsalted butter, softened
  • 500ml chicken stock
  • 125ml maple syrup
  • 165g redcurrant jelly
  • 60ml orange juice
  • 300ml pure (thin) cream
  • Lingonberry jam, to serve (see note)
Instructions:
  • Preheat the oven to 180°C. Rinse the turkey and dry it with paper towels. Secure the legs with kitchen string. Brush the turkey with butter, season it, and place it in a large roasting pan. Pour in 1 cup (250ml) stock. Cover with baking paper and foil, then roast for 2 hours.
  • In a saucepan over low heat, stir together maple syrup, jelly, and juice until the jelly dissolves. Keep the glaze warm.
  • Uncover turkey, baste with glaze, and continue roasting for 1 hour, basting every 15 minutes, until fully cooked and the skin is golden and caramelized. Rest the turkey on a platter, loosely covered with foil, while preparing the gravy.
  • Heat roasting pan over high heat, add remaining glaze and 1 cup (250ml) stock, stir and cook for 4-5 minutes until reduced by half. Stir in cream, reduce heat to medium, and cook for 2-3 minutes until reduced. Season, strain into a jug, and serve with turkey, gravy, and jam.
